So I hung out with the girl again tonight. It was a train-wreck so to say. I'm hanging out with her again tomorrow and am quickly realizing that something needs to happen or the whole thing is going to totally blow up in my face.

I'm sure you already realize this, but she is obviously getting very attached, and as traditional as she is, that leads to more serious things than you may be looking for. Who knows, maybe you'll find yourself getting as attached too, but if not, you may want to break things while it can still be done gently. She seems sweet, but very emotionally insecure.
It would be great to help her out of her shell. She'd be a great girl if she learned to not take rejection and comments so strongly. Just tread lightly. She's an emotional mine-field right now, from the sound of it.
She said it herself, she needs some self confidence.
